Impressive Ida

As the hostess with the mostess and the organizer of the annual potluck, Ida takes pride in wowing her guests with delicious foods that are shockingly easy to prepare. This year, she pulled out all the stops (and tapped into her Texas roots) with Slow Cooker Pulled Pork. Ida chose this recipe because it’s packed with flavor. Plus, she could throw all the ingredients into her slow cooker and set the table in the meantime.

Slow Cooker Pulled Pork

Ingredients

  • 1½ cups water
  • ½ cup cider vinegar
  • 2 tablespoons oil
  • 1 (5 pound) boneless pork shoulder, trimmed
  • ¼ cup packed brown sugar
  • 1 teaspoon seasoned salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground cinnamon
  • 1 (18 ounce) bottle barbeque sauce

Directions

Step 1

Set a slow cooker to Low. Combine water and vinegar together in the slow cooker.

Step 2

Rub oil over entire pork shoulder and let rest for 5 minutes.

Step 3

Mix brown sugar, seasoned salt, black pepper, cumin, cayenne pepper, garlic powder, onion powder and cinnamon together in a bowl; rub over entire pork shoulder. Place pork shoulder into the slow cooker.

Step 4

Cook on Low, 6 to 8 hours.

Step 5

Transfer pork shoulder to a work surface and let rest for 10 minutes. Discard cooking liquid from slow cooker. Place pork back into the slow cooker and shred; add barbeque sauce and stir.

A native of Idaho, she knows that potatoes are always a crowd-pleaser at parties, which is why she whipped up a big bowl of tasty make-ahead mashed potatoes this year. (Spoiler alert: She didn’t go home with leftovers.)

Make-Ahead Mashed Potatoes

Ingredients

  • 5 pounds Yukon Gold potatoes, cubed
  • 2 (3 ounce) packages cream cheese
  • 8 ounces sour cream
  • ½ cup milk
  • 2 teaspoons onion salt
  • ground black pepper to taste

Directions

Step 1

Preheat the oven to 325 degrees F (165 degrees C).

Step 2

Place potatoes in a large pot of lightly salted water. Bring to a boil and cook until tender, about 15 minutes. Drain and mash.

Step 3

In a large bowl, mix mashed potatoes, cream cheese, sour cream, milk, onion salt and pepper. Transfer to a large casserole dish.

Step 4

Cover and bake for 50 minutes in the preheated oven. Store in refrigerator for up to five days.

Ingredients

  • 1¾ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ½ cup butter, softened
  • ½ cup white sugar
  • ½ cup peanut butter
  • ½ cup packed brown sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 40 miniature chocolate covered peanut butter cups, unwrapped

Directions

Step 1

Preheat oven to 375 degrees F (190 degrees C). Sift together the flour, salt and baking soda; set aside.

Step 2

Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well. Shape into 40 balls and place each into an ungreased mini muffin pan.

Step 3

Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

  • 1 pound zucchini, diced
  • 3 apples, diced
  • ½ green bell pepper, diced
  • ½ red onion, chopped
  • ⅓ cup vegetable oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon white sugar
  • 1 teaspoon dried basil
  • ¾ teaspoon salt
  • ¼ teaspoon ground black pepper

Directions

Step 1

Combine zucchini, apples, green bell pepper and onion in a bowl.

Step 2

Whisk vegetable oil, vinegar, sugar, basil, salt and black pepper together in a separate bowl; drizzle over zucchini-apple mixture. Toss to coat.
