It’s a brand-new year, which means it’s time to get creative in the kitchen. Discover exciting new takes on three classic dishes, from lasagna to burgers, and get inspired to try them for yourself. CLASSIC LASAGNA FOR A
TACO-INSPIRED VERSION

Warm and cheesy, lasagna is the ultimate comfort food. This Mexican version of the classic Italian dish features tortillas and salsa in place of noodles and pasta sauce. Top with a dollop of sour cream and serve alongside rice and refried beans for a different take on taco Tuesday.

Ingredients:

  • 2 pounds lean ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 4 cloves garlic, minced
  • ½ teaspoon cayenne pepper
  • 1 tablespoon chili powder
  • ½ cup water
  • 18 (6 inch) corn tortillas
  • 1 (24 ounce) jar salsa
  • 1 cup sliced green onion
  • 1 (16 ounce) container sour cream
  • 1½ cups shredded cheddar cheese
  • 1½ cups shredded Monterey Jack cheese

Directions:

Step 1

Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, then season with taco seasoning, garlic, cayenne pepper, chili powder, and water. Simmer for 10 minutes.

Step 2

Preheat oven to 375 degrees F (190 degrees C).
Grease the bottom of a 9x13 inch baking dish.

Step 3

Place 6 tortillas into the prepared baking dish. Spread ⅓ of the salsa on top of the tortillas. Spread ½ of the meat mixture evenly over the salsa. Sprinkle with ½ of the green onions. Drop ½ of the sour cream over the green onions. Top with ½ cup cheddar and ½ cup Monterey Jack cheese. Repeat layers. Top with 6 tortillas, spread with remaining salsa, and sprinkle with remaining cheese.

Step 4

Bake in a preheated over for 30 to 45 minutes or until cheeses are melted.

GRILLED HAMBURGERS FOR HEARTY HAMBURGER SOUP

Craving a burger? Hearty hamburger soup is a great alternative when it’s too cold for a backyard barbecue. You can prep this dish in less than 30 minutes. After browning the ground beef, add the ingredients to a large pot and simmer for two hours. Enjoy the flavorful soup with a dinner roll for dipping or a batch of homemade French fries.

Ingredients:

  • 1½ pounds ground beef
  • 1 onion, minced
  • 4 carrots, minced
  • 3 celery ribs, thinly sliced
  • ½ cup barley
  • 1 (28) ounce can diced tomatoes
  • 2 cups water
  • 3 (10 ounce) cans beef broth
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 bay leaf
  • 1 tablespoon parsley
  • 1 teaspoon minced garlic
  • ½ teaspoon dried thyme
  • Ground black pepper, to taste

Directions:

Step 1

Heat a large soup pot over medium-high heat and crumble in the ground beef. Cook and stir until the beef is evenly browned and no longer pink. Drain and discard any excess grease.

Step 2

Stir in the onion, carrots celery, and barley. Pour in diced tomatoes, water, broth, and tomato soup. Season with bay leaf, parsley, garlic, thyme, and pepper. Bring to a boil. Reduce heat and cover; simmer for 2 hours, stirring frequently. Remove bay leaf before serving.

CHICKEN FAJITAS FOR
STUFFED BELL PEPPERS

If you’re looking for a delicious way to increase your veggie intake, try whipping up these stuffed bell peppers. The filling rice-and-cheese mixture is served inside of a crunchy bell pepper instead of a tortilla. It’s vegetarian and only takes 20 minutes to prep.

Ingredients:

  • 1 cup water
  • ½ cup uncooked Arborio rice
  • 2 green bell peppers, halved and seeded
  • 1 tablespoon olive oil
  • 2 green onions, thinly sliced
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 pinch ground black pepper
  • 1 tomato, diced
  • ½ cup crumbled feta cheese

Directions:

Step 1

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.

Step 2

In a medium saucepan, bring water to a boil. Stir in the rice. Reduce heat, cover, and simmer for 20 minutes. Remove from heat and set aside.

Step 3

Place the peppers cut side down on the prepared baking sheet. Roast 25 to 30 minutes in the preheated oven, or until tender and skin starts to brown.

Step 4

While the peppers are roasting, heat oil in a medium skillet over medium-high heat. Cook the onions, basil, Italian seasoning, salt, and pepper in oil for 2 to 3 minutes. Stir in the tomato and cook for 5 minutes. Spoon in the cooked rice and stir until heated through. Remove from heat, mix in the feta cheese, and spoon the mixture into the pepper halves.

Step 5

Return to the oven for 5 minutes. Serve immediately.
