Start the week off on the right foot with a steaming bowl of chili. Packed with protein and nutrients, this hearty meal will leave you feeling satisfied and ready to take on the week ahead. Plus, it couldn’t be easier to make—just toss everything into your soup pot!

Ingredients:

  • 1 tablespoon olive oil
  • ½ medium onion, chopped
  • 2 bay leaves
  • 1 teaspoon ground cumin
  • 2 tablespoons dried oregano
  • 1 tablespoon salt
  • 2 stalks celery, chopped
  • 2 green bell peppers, chopped
  • 2 jalapeño peppers, chopped
  • 3 cloves garlic, chopped
  • 2 (4 ounce) cans chopped green chile peppers, drained
  • 2 (12 ounce) packages vegetarian burger crumbles
  • 3 (28 ounce) cans whole peeled tomatoes, crushed
  • ¼ cup chili powder
  • 1 tablespoon ground black pepper
  • 1 (15 ounce) can kidney beans, drained
  • 1 (15 ounce) can garbanzo beans, drained
  • 1 (15 ounce) can black beans
  • 1 (15 ounce) can whole kernel corn

Directions:

Step 1

Heat the olive oil in a large pot over medium heat. Stir in the onion and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeño peppers, garlic, and green chile peppers. When vegetables are heated through, mix in the vegetarian burger crumbles. Reduce heat to low, cover pot, and simmer 5 minutes.

Step 2

Mix the tomatoes into the pot. Season with chili powder and pepper. Stir in the kidney beans, garbanzo beans, and black beans. Bring to a boil, reduce heat to low, and simmer 45 minutes. Stir in the corn and continue cooking 5 minutes before serving.

Tasty Baked Spaghetti

The only thing more delicious than spaghetti is baked spaghetti. Take your Tuesday night up a notch with this super-simple comfort dish. Just don’t be surprised when it becomes a year-round staple on your dinner menu!

Ingredients:

  • 1 (16 ounce) package spaghetti
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 (32 ounce) jar meatless spaghetti sauce
  • ½ teaspoon seasoned salt
  • 2 eggs
  • ⅓ cup grated Parmesan cheese
  • 5 tablespoons butter, melted
  • 2 cups small curd cottage cheese, divided
  • 4 cups shredded mozzarella cheese, divided

Directions:

Step 1

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.

Step 2

Bring a large pot of lightly salted water to a boil. Cook spaghetti in boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain.

Step 3

Heat a large skillet over medium heat. Cook and stir beef and onion until meat is browned and onions are soft and translucent, about 7 minutes. Drain. Stir in spaghetti sauce and seasoned salt.

Step 4

Whisk eggs, Parmesan cheese, and butter in a large bowl. Mix in spaghetti to egg mixture and toss to coat. Place half the spaghetti mixture into baking dish. Top with half the cottage cheese, mozzarella, and meat sauce. Repeat layers. Cover with aluminum foil.

Step 5

Bake in preheated oven for 40 minutes. Remove foil and continue to bake until the cheese is melted and lightly browned, 20 to 25 minutes longer.

Simple Sausage Soup

Warm up on Wednesday with a soup that combines some of the tastiest cold-weather classics. Spicy Italian sausage, bow-tie noodles, veggies, and chicken broth will make this flavorful blend a family favorite.

Ingredients:

  • 1 pound Italian sausage
  • 2 onions, chopped
  • 1 (28 ounce) can whole peeled tomatoes with juice
  • 6 cups chicken broth
  • 2 teaspoons dried basil
  • 2 cups bow tie pasta
  • ½ teaspoon garlic salt
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1½ cups shredded cabbage

Directions:

Step 1

In a soup pot, cook sausage over medium heat until no pink remains.

Step 2

Add onions, celery, and carrots. Cook uncovered for 5 minutes, or until onions are soft.

Step 3

Add tomatoes, chicken broth, cabbage, and basil. Bring to a boil. Stir in pasta and cover. Simmer for 10 minutes, or until pasta is tender. Season with garlic salt. Serve.

Looking for a way to spice up your Thursday evening? Try mouthwatering sheet pan shrimp fajitas. This delicious entrée packed with peppers is an easy way to bring the heat this winter.

Ingredients:

  • 1 (1 ounce) package fajita seasoning
  • 1 tablespoon olive oil
  • 1½ pounds raw shrimp, peeled and deveined
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 red onion, sliced into strips
  • 1 jalapeño pepper, sliced into rings

Directions:

Step 1

Preheat oven to 450 degrees F (230 degrees C).

Step 2

Mix fajita seasoning and olive oil together in a large bowl. Add shrimp; toss to coat.

Step 3

Lay out seasoned shrimp in a single layer on a baking sheet. Add red bell pepper, yellow bell pepper, red onion, and jalapeño pepper. Mix with shrimp and spread out evenly.

Step 4

Roast in the preheated oven until shrimp are opaque, 8 to 10 minutes. Transfer shrimp to a serving plate.

Step 5

Broil pepper mixture until lightly blackened, 2 to 3 minutes. Transfer to the serving plate with shrimp.

  • ½ cup barbecue sauce
  • ½ cup diced grilled chicken
  • ¼ cup chopped red bell pepper
  • ¼ cup chopped green bell pepper
  • ¼ cup chopped red onion
  • 1 cup shredded Monterey Jack cheese

Directions:

Step 1

Preheat oven to 450 degrees F (230 degrees C).

Step 2

Place pizza crust on cookie sheet. Spread with barbecue sauce. Scatter chicken over top. Sprinkle evenly with red pepper, green pepper, and onion. Cover with cheese.

Step 3

Bake in preheated oven for 10 to 12 minutes, or until cheese is melted.

Ingredients:

  • 1 pre-made pastry for a 9-inch double crust pie
  • 2 cups frozen mixed vegetables
  • 2 boneless, skinless chicken breast halves, boiled
  • 1 teaspoon dried thyme
  • ½ (10.75 ounce) can condensed cream of celery soup
  • 1 (10.75 ounce) can condensed cream of potato soup

Directions:

Step 1

Preheat oven to 400 degrees F (200 degrees C). Line a 9-inch pie dish with pastry.

Step 2

Blanch frozen mixed vegetables for 3 to 4 minutes. Drain.

Step 3

Dice chicken and place in a large bowl. Add vegetables, thyme, celery soup, and potato soup. Stir together.

Step 4

Pour filling into pastry-lined pie dish. Arrange top layer of pie crust, seal, and flute the edges. Cut slits in the top of the crust to allow for steam to escape.

Step 5

Place pie on cookie sheet. Put aluminum foil around the pie crust edges. Bake at 400 degrees F (200 degrees C) for 30 minutes. Remove foil and continue to bake for an additional 30 minutes until golden brown. Remove from oven and let stand for 5 minutes and then serve.

There’s no such thing as Sunday scaries when you’re eating breakfast for dinner. Filled with fluffy eggs, sausage, cheddar cheese, and hash browns, this recipe combines all the A.M. MVPs into one delicious casserole.

Ingredients:

  • 1 (16 ounce) package bulk breakfast sausage
  • 1 green onion, chopped
  • 1 (16 ounce) package hash brown potatoes
  • 2 cups shredded cheddar cheese
  • 6 large eggs, lightly beaten
  • 1 cup milk
  • 1 (2.64 ounce) package country gravy mix
  • 1 pinch paprika, or to taste

Directions:

Step 1

Preheat oven to 325 degrees F (165 degrees C). Grease an 8x11-inch baking dish.

Step 2

Cook and stir breakfast sausage in a skillet over medium heat until browned and crumbly, about 10 minutes; drain excess grease. Mix green onion into sausage and spread mixture over bottom of the prepared baking dish. Spread hash brown potatoes in a layer over sausage and top with cheddar cheese.

Step 3

Whisk eggs, milk, and gravy mix in a bowl until smooth; pour over casserole. Season with paprika.

Step 4

Bake in the preheated oven until a knife inserted into the center of the casserole comes out clean, about 1 hour. Let stand 10 minutes to firm up before serving.
