Mushrooms

These fungi are a tasty addition to many cold-weather dishes. There are many different ways to cook with them: baby bella mushrooms are perfect in a creamy risotto, while shiitake make for a delicious side dish when sautéed. For a better-for-you bonfire entrée both vegetarians and carnivores will love, try portobello mushroom burgers.

MUST-HAVE PORTOBELLO
MUSHROOM BURGER

Ingredients:

  • 4 portobello mushroom caps
  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 tablespoon minced garlic
  • salt and pepper to taste
  • 4 slices provolone cheese

Directions:

Step 1

Place the mushroom caps, smooth side up, in a shallow dish. In a small bowl, whisk together vinegar, oil, basil, oregano, garlic, salt, and pepper. Pour over the mushrooms. Let stand at room temperature for 15 minutes, turning twice.

Step 2

Preheat grill to medium-high heat.

Step 3

Brush grate with oil. Place mushrooms on the grill, reserving marinade for basting. Grill 5 to 8 minutes on each side, or until tender. Brush with marinade frequently. Top with cheese during the last 2 minutes of grilling.

Pecans

These extremely versatile nuts are harvested between October and December. They can add a slightly sweet crunch to your chicken salad sandwich or green salad, make a delicious topping for oatmeal or yogurt parfaits, or serve as a staple in many baked goods. This Thanksgiving, put a twist on the classic pecan pie with easy pecan tarts.

Perfect Pecan Tarts

Ingredients:

  • 1 package 9-inch refrigerated pie crusts
  • 2 eggs, beaten
  • 1 cup white sugar
  • 3 tablespoons butter, melted
  • 5 tablespoons dark corn syrup
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Directions:

Step 1

Preheat oven to 325 degrees F (165 degrees C). Lightly grease 8 3-inch tart tins.

Step 2

Roll out pastry and cut 8 5-inch circles. Fit pastry circles into greased tart tins.

Step 3

In a large bowl, combine eggs, sugar, butter or margarine, corn syrup, and vanilla extract. Mix well, then stir in pecans. Pour an equal amount of mixture into each pastry-lined tart tin.

Step 4

Bake in preheated oven for 30 to 35 minutes until pastry is golden brown and filling is set.

Pomegranates

The arils from this fruit, which is in season from October through January, can add pops of tart flavor to many sweet and savory dishes. Toss them into a fruit salad, sprinkle them over chicken and rice, or use them to top off overnight oats for your next family brunch buffet.

TASTY CHAI POMEGRANATE OVERNIGHT OATS

Ingredients:

  • ½ cup oats (quick or old fashioned, uncooked)
  • 1 chai tea bag
  • ¼ cup low-fat vanilla Greek yogurt
  • ½ cup low-fat milk
  • 1 teaspoon honey
  • ¼ cup pomegranate seeds

Directions:

Step 1

Add oats to a container of your choice and pour in chai tea latte.

Step 2

Layer on yogurt and top with honey and pomegranate seeds.

Step 3

Refrigerate overnight and enjoy in the morning!

Prep Tip: To make a chai tea latte, heat ½ cup of low-fat milk with chai tea packet. Cool before mixing with oats.

Cloves

These spices derived from the flower buds of an evergreen tree are a staple in many classic fall desserts, like pumpkin pie, spice cake, and ginger snap cookies. They’re also the main ingredient in many classic holiday party beverages, such as mulled wine and hot cider punch.

FESTIVE HOT CIDER PUNCH

Ingredients:

  • 3 cups apple juice
  • 2 ½ cups unsweetened pineapple juice
  • 2 cups cranberry juice
  • ¼ cup brown sugar
  • 2 cinnamon sticks
  • 2 teaspoons whole cloves
  • 2 teaspoons ground allspice

Directions:

Step 1

Stir the apple juice, pineapple juice, and cranberry juice together with the brown sugar in a large pan. Place the cinnamon sticks, cloves, and ground allspice into a large tea ball or cheesecloth bag. Place the spice bag into the pan with the juice mixture. Heat the juice mixture over medium-high heat about 10 minutes. Serve hot.
