Turkey Grilled Cheese with Gouda, Arugula, and Pear

I love this elevated grilled cheese because it splits the difference between light-and-elegant and comforting-and-cheesy, making a versatile lunch or dinner that can please just about anyone (and my picky kids love them, so I really do mean anyone). Bonus: It takes only minutes to make!

Generously spreading the bread with Country Crock imparts a wonderfully buttery, toasty flavor.

INGREDIENTS

  • ΒΌ cup Country Crock Original
  • 8 large slices multigrain country bread
  • 12 slices smoked turkey (about 14 ounces)
  • 1 pear, thinly sliced
  • 8 ounces gouda, sliced (8 to 12 slices)
  • 4 handfuls baby arugula, from a 5-ounce package
  • Black pepper

INSTRUCTIONS

  1. Spread 1 tablespoon of Country Crock on each slice of bread. Assemble the sandwiches by placing 3 slices of turkey on each of 4 buttered bread slices, followed by fanned-out slices of pear and 2 or 3 slices of gouda. Scatter arugula on top. Season generously with black pepper, and top each with a bread slice.
  2. Cook on medium heat in a nonstick pan, turning every few minutes to keep each side evenly toasting. Remove from heat when the cheese is melted and the bread is golden brown.

Elevate every meal with fresh, creamy Country Crock.
