Spiced Lamb and Butternut
Squash Chili

This Middle Eastern-inspired twist on chili tastes complex, but it requires just one pot and is on the table in about 30 minutes. The combination of harissa with the simple shortcut of Campbell’s® Condensed Tomato Soup creates a spicy, savory, and rich broth. Ground lamb has a distinctive earthy flavor that pairs well with tomato, squash, and spices. You may substitute ground beef or ground turkey.

Ingredients

  • 3 tablespoons olive oil
  • 1 large yellow or red onion, finely chopped
  • 1 teaspoon kosher salt, plus more to taste
  • 6 large garlic cloves, smashed and chopped
  • 1 pound ground lamb
  • 1/2 teaspoon turmeric
  • Ground black pepper
  • 2 tablespoons harissa paste, plus more to taste
  • 1 (10.5-ounce) can Campbell’s® Condensed Tomato Soup
  • 1 1/2 cups Swanson® chicken broth
  • 1 (10-ounce) bag frozen cubed butternut squash or sweet potatoes
  • 2 cups frozen spinach or 1 (5-ounce) container fresh baby spinach
  • Shelled pistachios or slivered almonds, for topping

Directions

  1. Warm the oil in a large pot or Dutch oven over medium-high heat. Add the onion and the salt and cook for 5 minutes, stirring often, until the onion is softened. Add the garlic and cook for two minutes or until softened and fragrant.
  2. Add the lamb, turmeric, and several generous grinds of black pepper. Cook, breaking up the lamb with a spatula, until the meat is in crumbles and has started to release its fat, about 5 minutes.
  3. Stir in the harissa until well combined, and then add the Campbell’s® Condensed Tomato Soup, broth, and the cubed squash or potatoes. Increase the heat to high to bring to a boil, then lower to a simmer for 10 minutes.
  4. Add the spinach and cook 3 to 4 minutes longer, until the spinach is wilted and all the flavors are blended. Add more harissa or salt to taste, if necessary.
  5. Serve in bowls topped with pistachios or almonds.
