Broccoli & Cheese Veggie Tots Waffles with Bacon and Eggs

Waffles made from Veggie Tots are fun to make and eat, and they’re a great way to help meet your daily recommended servings of vegetables.


  • Cooking Spray
  • 2 (14-oz) bags Green Giant Veggie Tots Broccoli & Cheese, thawed*
  • 4 large eggs
  • 8 slices cooked bacon (about 10 oz)
  • Optional Garnish: Thinly sliced scallions, hot sauce

  • 1Preheat oven to 200F.
  • 2Heat an 6-7” waffle iron to medium-high heat. Spray liberally with cooking spray. When ready, open and arrange the Veggie Tots, touching each other, to fill the iron. Close and press firmly. Cook 5 minutes.
  • 3Remove and place on a wire rack over a sheet tray. Hold warm in the oven. Repeat to make 2 waffles.
  • 4Cut each waffle in half. Serve each half, topped with two slices of bacon and a fried egg. Garnish with scallions and hot sauce, if desired.

Thaw Veggie Tots on the counter for 1 hour before cooking, or place them in the refrigerator in the morning, to be thawed by dinner time.
